1.5 lbs boneless, skinless chicken breast
3 cans Great Northern beans, rinsed and drained
1 can diced green chiles
4 cups low-sodium chicken broth
1 large onion, finely diced
4 cloves garlic, minced
2 tsp ground cumin
1 tsp dried oregano
2 tbsp olive oil
1 lime, juiced
Salt and pepper to taste

Instructions

Heat olive oil in a large heavy-bottomed pot over medium heat.
Sauté the diced onions until translucent and soft, about five minutes.
Add minced garlic, cumin, and dried oregano, stirring constantly for one minute to bloom the spices.
Pour in the chicken broth and add the chicken breasts.
Simmer for twenty minutes until chicken is cooked through.
Remove chicken, shred with two forks, and set aside.
Blend one cup of the beans with a splash of broth until smooth, then stir back into the pot.
Add the shredded chicken, the remaining whole beans, and the diced green chiles to the pot.
Simmer for another fifteen minutes to allow flavors to meld and thicken.
Stir in the fresh lime juice just before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freezes well for up to 2 months. You can use rotisserie chicken as a shortcut, adding it during the final simmer phase to save time.
