This lean, protein-packed turkey meatloaf is a perfect healthy comfort food staple for busy weeknights. By combining 93% lean ground turkey with moisture-rich ingredients like panko breadcrumbs soaked in milk, sautéed aromatics, and a savory tomato glaze, this recipe ensures a tender and flavorful result without the dryness often associated with ground turkey.

Ingredients

Scale

2 lbs 93% lean ground turkey
1 cup Panko breadcrumbs
1/2 cup milk
1 medium onion, finely diced
3 cloves garlic, minced
1 large egg
1/2 cup sugar-free ketchup or tomato paste
1 tsp salt
1/2 tsp black pepper

Instructions

Preheat your oven to 375°F.
Sauté the diced onions and garlic in a skillet until translucent.
Combine the milk and breadcrumbs in a small bowl and let them soak for five minutes.
In a large bowl, mix the ground turkey, soaked breadcrumbs, sautéed vegetables, egg, salt, and pepper.
Shape the mixture into a loaf on a parchment-lined baking sheet or loaf pan.
Spread the tomato glaze evenly over the top of the loaf.
Bake for 55 to 60 minutes, or until an internal temperature reaches 165°F.
Rest the meatloaf on the counter for ten minutes before slicing.

Notes

Use high-quality breadcrumbs to better absorb juices. Allow the onion mixture to cool slightly before mixing with the turkey to prevent the egg from scrambling. Resting the meatloaf is essential for keeping it juicy.
