1 tsp salt
1/2 cup shortening (lard substitute)
1 1/2 cups boiling water
2 cups cooked black beans
1 cup shredded cheddar cheese
1 tbsp chili powder
1 tsp ground cumin
1/2 cup sour cream
1/2 cup frozen corn kernels
1 cup crushed cornflakes or panko crumbs (for topping)
1/2 cup salsa (optional topping)

Instructions

Preheat oven to 375°F (190°C)
Sift masa flour, baking powder, and salt into a bowl
Mix shortening with boiling water until smooth, then stir into dry ingredients
Press dough into a greased 13×9-inch dish, prick with fork
Precook black beans in spice mixture (chili powder, cumin) if needed
Layer masa crust with beans, cheese, sour cream, and corn
Sprinkle crushed cornflakes over top
Bake 35 minutes until golden and bubbly
Let rest 10 minutes before serving
Add salsa topping before slicing
