A crispy Tex-Mex fusion casserole featuring layers of golden tater tots, seasoned beef, and tangy tomato salsa. Perfect for quick weeknight dinners with a cheesy, baked finish.

Ingredients

Scale

1 lb ground beef
12 oz frozen tater tots
1 cup diced tomatoes (canned or fresh)
2 cups shredded cheddar or vegan cheese
Taco seasoning (to taste)
Crushed tortilla chips (optional)

Instructions

Grease a 9″x13″ baking dish with oil
Spread frozen tater tots in a single layer
Bake at 400°F for 15 minutes
Add taco seasoning to pre-cooked ground beef, mix, and spread over the tater tots
Bake for an additional 15 minutes until cheese is melted and golden

Notes

Use frozen tater tots straight from the bag for optimal crisp
Add crushed tortilla chips under the tots layer for extra crunch
Avoid adding wet toppings prematurely to prevent sogginess; add after baking
Ground beef can be substituted with mushrooms for a meatier vegan texture
Mozzarella works but cheddar creates better cheese pull
Reduce oven to 375°F after 15 minutes if tots overbrown
Assemble up to 8 hours ahead and refrigerate before baking
Suitable for kids: skip kimchi toppings and add plain yogurt as garnish
Refrigerate leftovers in an airtight container for up to 3 days
Reheat in oven at 350°F until heated through
