Ingredients

Ground Turkey, 1 lb
Canned Black Beans, 15 oz (drained and rinsed)
Dried Taco Seasoning, 2 tbsp
Tortilla Strips, 2 cups
Shredded Cheddar Cheese, 2 cups
Diced Tomatoes with Green Chilies, 14 oz can (drained)
Non-stick cooking spray

Instructions

Brown ground turkey in the slow cooker using non-stick spray until no pink remains
Stir in drained black beans, taco seasoning, and diced tomatoes with chilies
Layer 1 cup tortilla strips in the cooker
Add 1 cup shredded cheese over the bean mixture
Top with remaining tortilla strips and 1 cup cheese
Cover and cook on LOW for 6 hours
Uncover and broil 3-4 minutes until cheese is bubbly
Let rest 10 minutes before serving
