Experience the ultimate comfort food with this hassle-free slow cooker meatloaf. By utilizing the gentle, consistent heat of a slow cooker, this recipe ensures a moist and tender loaf that avoids the drying risks of the oven. Packed with savory aromatics like onion and garlic, and finished with a tangy, slightly sweet glaze, this recipe is perfect for busy families looking for a restaurant-quality meal that is ready to serve after a long day.

Ingredients

Scale

2 lbs lean ground beef (90/10)
1 cup Panko breadcrumbs
1 small onion, finely diced
2 large eggs
1/4 cup milk
3 cloves garlic, minced
2 tbsp Worcestershire sauce (ensure alcohol-free)
1/2 cup ketchup
2 tbsp brown sugar

Instructions

In a large mixing bowl, combine the ground beef, breadcrumbs, diced onions, minced garlic, milk, and eggs.
Mix the ingredients gently with your hands until just incorporated.
Shape the mixture into a compact oval loaf that fits inside your slow cooker.
In a small bowl, whisk together the ketchup and brown sugar to create the glaze.
Place the meatloaf into the slow cooker and spread the glaze evenly over the top.
Cover and cook on High for 4 hours or on Low for 7 hours.
Carefully lift the meatloaf out of the slow cooker and let it rest for 10 minutes before slicing.

Notes

For easier cleanup, line the bottom of your slow cooker with a piece of parchment paper or a slow cooker liner. Ensure your Worcestershire sauce does not contain alcohol, as some brands use fermented ingredients that may require checking.
