This traditional autumnal dessert features a velvety, spiced pumpkin custard nestled within a perfectly flaky, buttery crust. By using high-quality pumpkin puree and a precise ratio of heavy cream and eggs, this pie achieves a professional-grade set that is smooth, rich, and balanced. It is the perfect centerpiece for holiday gatherings, offering the warm, comforting flavors of cinnamon, ginger, and cloves in every bite.

Ingredients

Scale

15 oz pure pumpkin puree
3 large eggs, room temperature
1.5 cups heavy cream
0.75 cup granulated sugar
2 tsp pumpkin pie spice
0.5 tsp salt
1 pie crust (store-bought or homemade)

Instructions

Preheat your oven to 425°F.
In a large bowl, whisk together eggs, sugar, pumpkin puree, pumpkin pie spice, and salt until smooth.
Slowly incorporate the heavy cream into the mixture, whisking gently until well combined.
Pour the custard mixture into the prepared pie crust.
Bake at 425°F for 15 minutes to set the edges.
Reduce the oven temperature to 350°F and continue baking for 40 minutes, or until the center is set.
Remove from the oven and cool completely on a wire rack before serving.

Notes

Use room temperature eggs for better emulsification. If the crust browns too quickly, use a pie shield or aluminum foil around the edges. Avoid over-mixing the custard to prevent cracks in the finished pie. Store leftovers in the refrigerator.
