15 oz can chickpeas, drained and rinsed
1/3 cup high-quality tahini
3 tbsp freshly squeezed lemon juice
1 clove garlic, minced finely
2 tbsp extra virgin olive oil
1/2 tsp ground cumin
Salt to taste
Ice water as needed

Instructions

Combine the tahini and lemon juice in a food processor bowl and blend for one minute to create a whipped, creamy base.
Add the olive oil, minced garlic, cumin, and salt to the processor bowl and blend for another thirty seconds to infuse the flavors.
Add half of the rinsed chickpeas to the processor and blend for one minute until the mixture looks uniform.
Add the remaining chickpeas and process for another two minutes until the texture achieves a completely smooth consistency.
Adjust the consistency by adding one tablespoon of ice water at a time while the processor runs until you reach the desired fluffiness.

Notes

For the absolute creamiest texture possible, remove the individual skins from the chickpeas before blending. Store in an airtight container in the refrigerator for up to 4 days.
