These pumpkin chocolate chip cookie bars offer a dense, chewy texture combined with warm autumnal spices and rich pools of melted semi-sweet chocolate. Perfect for home bakers looking for a simple, decadent treat, these bars replace the effort of scooping individual dough balls with a consistent, soft-baked experience in every single bite. The blend of pumpkin puree and melted butter ensures a fudgy, indulgent result that perfectly captures the flavors of the season.

Ingredients

Scale

2 cups all-purpose flour
1/2 cup pumpkin puree (100% pure)
1 cup brown sugar
1/2 cup unsalted butter, melted and cooled
1 1/2 cups semi-sweet chocolate chips
1 large egg, room temperature
2 teaspoons pumpkin pie spice
1/2 teaspoon baking soda
1/4 teaspoon salt

Instructions

Preheat oven to 350°F and grease a 9×9 inch square baking pan.
Whisk flour, baking soda, salt, and pumpkin pie spice together in a medium bowl.
Combine melted butter and brown sugar in a large bowl until smooth and glossy.
Add the egg to the butter mixture and whisk until fully incorporated.
Fold the pumpkin puree into the wet ingredients until no streaks remain.
Stir the dry ingredients into the wet ingredients until just combined.
Fold in the semi-sweet chocolate chips.
Spread the dough evenly into the prepared baking pan.
Bake for 25 minutes or until the edges are set and a toothpick comes out mostly clean.
Allow the bars to cool completely in the pan before slicing into squares.

Notes

Use high-quality pumpkin puree, not pumpkin pie filling. To ensure a fudgy texture, do not overmix the batter once the flour is added. Store in an airtight container at room temperature for up to 3 days or refrigerate for longer storage.
