4 cups broccoli florets, cut into bite-sized pieces
2 cups sharp cheddar cheese, freshly shredded
4 cups vegetable broth, low-sodium
1 cup heavy cream
1 medium yellow onion, finely diced
3 cloves garlic, minced
3 tbsp unsalted butter
3 tbsp all-purpose flour

Instructions

Melt the butter in a large heavy-bottomed pot over medium heat.
Add the diced onion and cook until translucent and soft.
Stir in the minced garlic and cook for sixty seconds until fragrant.
Sprinkle the flour over the butter and onion mixture and whisk constantly for two minutes.
Gradually whisk in the vegetable broth to prevent lumps.
Add the broccoli florets and simmer for fifteen minutes until tender.
Lower the heat to a minimum and stir in the heavy cream.
Add the shredded cheddar cheese gradually, stirring until fully melted and smooth.

Notes

For the best melting results, always shred your own cheddar cheese from a block rather than using pre-shredded bags which contain anti-caking agents. Adjust the consistency by simmering longer to reduce or adding a splash more broth for a thinner soup.
