Organic lemons, unwaxed
Coarse cane sugar, 1 cup
Cold filtered water, 2 quarts (for mixing)
Cold filtered water, 1/2 cup (for syrup)
Ice cubes, 3 inches crushed (for serving)
Roll lemons on countertop with palm of hand
Cut each lemon crosswise for maximum juice yield
Extract juice through mesh strainer into measuring cup (min. 5 oz)
Combine 1 cup cane sugar and 1/2 cup water in microwave-safe bowl
Stir in bowl until sugar dissolves completely, then let syrup cool
In large pitcher, combine strained lemon juice and sugar syrup
Add remaining 2 quarts cold water and stir vigorously for 30 seconds
Chill lemonade for at least 30 minutes before serving
