A robust, protein-packed chili that skips the legumes to highlight the deep, savory flavors of high-quality ground beef and aromatic vegetables. Slow-cooked to perfection, this meal develops an incredibly thick consistency and intense, bold spice notes. It is the ultimate comfort food for those seeking a satisfying, meat-forward stew that is easy to prepare and perfect for serving at any dinner gathering.

Ingredients

Scale

2 lbs Ground Beef (85/15)
1 large Yellow Onion, finely diced
2 whole Bell Peppers, chopped
3 tbsp Tomato Paste
28 oz Diced Tomatoes (do not drain)
1 cup Beef Broth (low sodium)
3 tbsp Chili Powder
2 tsp Ground Cumin
1 tbsp Garlic Powder
1 tsp Smoked Paprika

Instructions

Brown the ground beef in a large skillet over medium-high heat until fully cooked.
Drain the excess fat from the skillet to prevent a greasy final product.
Combine the cooked beef, diced onions, and chopped peppers in the slow cooker basin.
Stir in the tomato paste, diced tomatoes, beef broth, and all listed spices.
Cover the crockpot and cook on low for 6 hours.

Notes

You can substitute ground beef with ground turkey for a leaner version. If you prefer fresh garlic over garlic powder, use 3-4 cloves of minced garlic. Store leftovers in an airtight container in the refrigerator for up to 3 days.
