Ingredients

Scale

2 cups all-purpose flour
1 tsp baking soda
0.5 tsp salt
0.5 cup unsalted butter, melted and cooled
0.75 cup granulated sugar
2 large eggs
0.5 cup sour cream
4 medium overripe bananas

Instructions

Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
Whisk flour, baking soda, and salt in a medium bowl.
Mash bananas in a separate large bowl until mostly smooth.
Stir melted butter and sugar into the mashed bananas until glossy.
Beat in the eggs and sour cream until fully incorporated.
Fold the dry flour mixture into the wet ingredients until just combined.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes or until a tester comes out clean.
Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Ensure bananas have plenty of dark brown spots for maximum flavor and sweetness. Use the spoon-and-level method to measure flour to prevent a dry loaf. You can substitute sour cream with Greek yogurt if preferred.
