Ingredients

Scale

24 Mini tart shells
1.5 cups chopped pecans
1 cup brown sugar
4 tbsp butter, melted and cooled
2 large eggs
1 tsp pure vanilla extract
0.25 tsp salt

Instructions

Preheat your oven to 350 degrees Fahrenheit.
Prepare a mini muffin pan by lightly greasing each cavity if not using liners.
Chop the pecans into small, uniform pieces.
In a large bowl, whisk together the eggs, brown sugar, melted butter, vanilla extract, and salt until smooth.
Gently fold in the chopped pecans until they are thoroughly coated by the mixture.
Spoon the filling evenly into each of the 24 mini tart shells.
Bake for 20-25 minutes or until the filling is set and the pastry is golden brown.
Allow the pies to cool in the pan for 5-10 minutes before removing to a wire rack to cool completely.

Notes

Toast the pecans in a dry skillet over medium heat for 3-5 minutes before chopping to enhance their natural nuttiness. Store leftovers in an airtight container at room temperature for up to 3 days. These pies freeze exceptionally well for advance holiday planning.
