Ingredients

Scale

1 cup 100% pure pumpkin purée
3/4 cup pure maple syrup
2 cups all-purpose flour
2 tsp pumpkin pie spice
2 large eggs, room temperature
1/2 cup neutral oil (vegetable or avocado)
1 tsp baking powder
1 tsp baking soda

Instructions

Preheat your oven to 350 degrees Fahrenheit and grease a standard 9×5 loaf pan.
Whisk the pumpkin purée, maple syrup, oil, and eggs in a large glass bowl until completely smooth.
Sift the flour, baking powder, baking soda, and pumpkin pie spice into a separate medium-sized mixing bowl.
Fold the dry ingredients into the wet mixture using a silicone spatula until no streaks of flour remain.
Pour the thick batter into the prepared loaf pan and smooth the surface with the back of a spoon.
Bake on the center oven rack for 55 to 60 minutes, or until a skewer inserted in the center comes out clean.

Notes

Ensure your eggs are at room temperature to achieve the best aeration possible. If you prefer a more intense warmth, you may add an extra pinch of cinnamon. Store in an airtight container at room temperature for up to 3 days.
