Indulge in these incredibly creamy, cloud-like mashed potatoes loaded with sharp cheddar, chives, and crispy soy-based bacon. This comforting side dish uses Yukon Gold potatoes for their natural buttery flavor, whipped to perfection with warm dairy. It is the ultimate crowd-pleaser that elevates any family meal or dinner party into a gourmet experience without the fuss.

Ingredients

Scale

3 lbs Yukon Gold Potatoes, peeled and cut into chunks
1/2 cup Unsalted Butter, room temperature
1/2 cup Sour Cream
1 cup Sharp Cheddar cheese, freshly shredded
1/2 cup Vegetarian Bacon, crumbled
1/4 cup Fresh Chives, finely chopped
1/2 cup Whole Milk, warmed

Instructions

Place potato chunks in a large pot and cover with cold water by two inches.
Boil potatoes over medium-high heat until they become fork-tender.
Drain the water completely to prevent watery mash results.
Pass the hot potatoes through a ricer into a large mixing bowl.
Fold in softened butter and warm milk using a silicone spatula.
Stir in the sour cream until the mixture is uniform and creamy.
Fold in half of the shredded cheddar and crispy bacon into the potatoes.
Transfer the mixture to a serving bowl or baking dish.
Sprinkle the remaining cheese, bacon, and chives over the top.

Notes

Use a potato ricer for the smoothest, fluffiest texture. Always warm your milk before adding it to the potatoes to ensure they stay hot and absorb the liquid better. Ensure your butter is at room temperature to prevent the mash from cooling down too quickly during mixing.
