A casserole-style dish layering seasoned ground turkey, black beans, and melted cheese with crispy tortillas. Zesty toppings like salsa and cilantro add freshness for a satisfying, flavorful meal.

1 lb ground turkey (or tofu/vegan substitute)
1 can (15 oz) black beans, drained
2 cups Greek yogurt (add 1 tsp lime juice)
1 onion
Mushrooms
2 tbsp olive oil
1 tsp taco seasoning (with ¼ cup water)
Torn tortillas (enough to cover dish)
2 cups shredded cheese
¼ cup salsa
Fresh cilantro

Instructions

Preheat oven to 350°F (175°C)
Sauté onion and mushrooms in olive oil until softened
Add ground turkey (or tofu) and cook until browned
Stir in black beans, taco seasoning mixture, and Greek yogurt
Evenly spread meat/bean mixture in a greased baking dish
Layer torn tortillas over the base
Top with cheese, salsa, and cilantro
Bake 25 minutes until golden and bubbly
Let rest 10 minutes before serving
