Ingredients

Scale

1.5 lbs Chicken Breast, cut into 1-inch cubes
1/4 cup Extra virgin olive oil
1/4 cup Greek yogurt
2 tbsp Freshly squeezed lemon juice
3 cloves Garlic, minced
1 tsp Dried oregano
2 large Bell peppers, cut into 1-inch squares
1 large Red onion, cut into chunks

Instructions

Whisk the olive oil, yogurt, lemon juice, garlic, and dried oregano in a large mixing bowl until fully combined.
Toss the chicken cubes in the marinade to ensure every surface is coated evenly.
Cover and refrigerate for at least one hour to allow the flavors to penetrate the meat.
Preheat your grill to medium-high heat.
Thread marinated chicken, bell pepper pieces, and red onion chunks alternately onto skewers.
Grill the skewers for approximately 12 minutes, turning occasionally, until the chicken is cooked through and the vegetables have a nice char.

Notes

Ensure all chicken and vegetable pieces are cut to a uniform 1-inch size to guarantee even cooking. If using wooden skewers, remember to soak them in water for at least 30 minutes prior to grilling to prevent burning.
