1.5 lbs lean ground turkey
15 oz can black beans, drained and rinsed
15 oz can kidney beans, drained and rinsed
28 oz can fire-roasted diced tomatoes
1 cup corn kernels
2 tbsp chili powder
1 tsp cumin
4 cups low-sodium vegetable broth
1 tbsp olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1/2 tsp black pepper

Instructions

Heat olive oil in a large pot over medium-high heat.
Add ground turkey and cook, breaking into crumbles, until no longer pink and edges are golden.
Stir in diced onions and minced garlic, sautéing for about 3 minutes.
Add chili powder, cumin, and black pepper, toasting the spices for 30 seconds.
Pour in the broth, fire-roasted tomatoes, beans, and corn.
Bring the mixture to a boil, then reduce heat to low.
Simmer uncovered for 20-25 minutes to allow flavors to meld.
Serve warm, optionally topped with fresh cilantro or avocado.

Notes

Store in airtight containers in the refrigerator for up to 4 days. This soup freezes exceptionally well for up to 3 months. Feel free to use ground chicken as a direct protein substitute.
