Experience all the comforting, savory flavors of traditional lasagna in a simplified, nutrient-dense bowl. This lasagna soup uses lean ground turkey, fiber-rich pasta, and a creamy cottage cheese finish to create a hearty, protein-packed meal that is perfect for healthy meal prep. It streamlines the classic Italian favorite into a fast, one-pot wonder, providing balanced macros and a deeply satisfying taste without the labor of layering noodles.

Ingredients

Scale

1 lb ground turkey
24 oz low-sugar marinara sauce
4 cups low-sodium chicken broth
8 oz lasagna noodles, broken into bite-sized pieces
1 cup cottage cheese
2 cups fresh baby spinach
3 cloves garlic, minced
1 tbsp olive oil

Instructions

Heat olive oil in a large heavy-bottomed pot over medium heat.
Add ground turkey and cook until browned and fully cooked through.
Stir in minced garlic and cook for 1 minute until fragrant.
Pour in the marinara sauce and chicken broth, bringing the mixture to a simmer.
Add the broken lasagna noodles and cook according to package directions, about 10-12 minutes, until al dente.
Stir in the fresh baby spinach and cook until wilted.
Remove from heat and gently stir in the cottage cheese just before serving.

Notes

For even higher fiber, use whole wheat lasagna noodles. You can substitute the ground turkey with extra-lean ground beef if preferred. Store leftovers in an airtight container for up to 4 days.
