Ingredients

Scale

2 lbs ground turkey (93% lean or higher)
2 cans kidney beans, rinsed and drained
1 can black beans, rinsed and drained
28 oz diced tomatoes (no salt added)
1 medium onion, finely diced
4 cloves garlic, minced
3 tbsp chili powder
1 tbsp cumin
2 cups vegetable broth (low sodium)

Instructions

Heat a large heavy-bottomed pot over medium-high heat.
Add the ground turkey to the pot and brown until fully cooked through.
Drain any excess liquid from the pot.
Add the diced onions and garlic and sauté until translucent and fragrant.
Stir in the chili powder and cumin to coat the meat evenly, toasting briefly if desired.
Pour in the diced tomatoes and vegetable broth.
Add the rinsed kidney and black beans to the pot.
Simmer on low heat for 30 minutes to allow the flavors to meld.

Notes

Toast your spices in the dry pot for 60 seconds before adding liquids to bloom the natural oils for deeper flavor. Store in airtight containers for up to 5 days or freeze for up to 3 months.
