2 cups sharp cheddar cheese, freshly grated

1 cup cauliflower, steamed
1 small yellow onion, finely diced
3 cloves garlic, minced
2 tablespoons extra virgin olive oil

Instructions

Heat olive oil in a large heavy-bottomed pot over medium heat.
Add diced onions to the pot and sauté until translucent, about five minutes.
Stir in minced garlic and cook for one additional minute until fragrant.
Pour vegetable broth into the pot and bring to a gentle boil.
Add the steamed cauliflower to the broth.
Reduce heat and simmer for 15 minutes.
Use an immersion blender to process the broth and cauliflower until completely smooth.
Add the chopped broccoli florets and simmer until tender.
Stir in the grated sharp cheddar until fully melted and incorporated.

Notes
