3 large ripe bananas, spotted
2 cups oat flour
1/3 cup pure maple syrup
2 large eggs, room temperature
1/4 cup coconut oil, melted and cooled
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon fine sea salt

Instructions

Preheat your oven to 350 degrees Fahrenheit.
Grease a 9×5 inch loaf pan with coconut oil or line with parchment paper.
Mash the bananas in a large bowl until smooth but slightly chunky.
Whisk in the eggs, maple syrup, and melted coconut oil into the banana mash.
In a separate bowl, whisk together the oat flour, baking soda, cinnamon, and salt.
Fold the dry ingredients into the wet ingredients until just combined.
Pour the batter into the prepared loaf pan.
Bake for 50 to 55 minutes or until a toothpick inserted into the center comes out clean.

Notes

Ensure bananas have plenty of dark spots for optimal natural sweetness. If you don’t have oat flour, you can grind rolled oats in a blender until fine. Store in an airtight container at room temperature for up to 3 days, or freeze sliced portions for longer storage.
