2.5 lbs beef chuck roast, cut into 1.5-inch cubes
3 cups low-sodium vegetable stock
1 cup strong brewed coffee
2 tbsp black molasses
3 large carrots, sliced into thick rounds
4 medium Yukon Gold potatoes, chopped
2 large onions, diced finely
2 tbsp tomato paste
3 tbsp olive oil
Salt and black pepper to taste

Instructions

Heat olive oil in a large Dutch oven over medium-high heat.
Brown the beef cubes in three separate batches to ensure a deep, flavorful crust, then remove and set aside.
Sauté the onions in the remaining beef fat until golden and soft.
Stir in the tomato paste and cook for two minutes to develop umami flavor.
Deglaze the pot with the brewed coffee, scraping up all browned bits from the bottom.
Add the vegetable stock, molasses, and seared beef back into the pot.
Simmer on low heat for two hours, then add the carrots and potatoes.
Continue simmering for another hour or until the beef is fork-tender and vegetables are soft.

Notes

Ensure you sear the meat in small batches to avoid crowding the pan, which creates better caramelization. The stew is even better the next day as the flavors continue to develop while stored in the refrigerator.
