Ingredients

Scale

1 lb ground chicken (90% lean or higher)
3 tbsp soy sauce (or coconut aminos)
3 cloves garlic, minced finely
1 tbsp ginger, freshly grated
2 bell peppers, diced into small cubes
1 tsp sesame oil
3 stalks green onions, sliced
1 tsp cornstarch mixed with 1 tbsp water
1 tbsp neutral cooking oil

Instructions

Heat one tablespoon of neutral oil in a large skillet or wok over medium-high heat.
Add the ground chicken in an even layer and sear undisturbed for two minutes to develop a crust.
Break the chicken apart with a wooden spoon and stir until browned.
Add the diced bell peppers and sauté for about three minutes until slightly softened.
Stir in the minced garlic and grated ginger and cook until fragrant.
Whisk the soy sauce and cornstarch mixture and pour over the chicken and vegetables.
Stir constantly for one to two minutes until the sauce thickens and coats the mixture evenly.
Remove from heat and garnish with sliced green onions before serving.

Notes

Use a heavy-bottomed skillet or wok to ensure even heat distribution for the best sear. Feel free to add other vegetables like snap peas or shredded carrots if desired. This dish keeps well in an airtight container in the refrigerator for up to three days.
