These nutrient-dense, flavorful lettuce wraps combine lean ground chicken with fresh aromatics like ginger and garlic for a light yet satisfying meal. Using crisp butter lettuce leaves to cup the savory mixture, this dish provides an excellent low-carb, takeout-style experience that is perfect for quick weeknight dinners. The high-heat searing method ensures a crispy texture, creating a professional-quality appetizer or main course that is entirely free of pork or alcohol.

Ingredients

Scale

1 lb ground chicken (preferably thigh meat)
1 head butter lettuce, leaves separated and washed
1 tbsp fresh ginger, grated
3 cloves garlic, minced
1/2 cup water chestnuts, chopped
2 tbsp hoisin sauce
2 tbsp low-sodium soy sauce
1 tsp toasted sesame oil
1 tbsp neutral cooking oil

Instructions

Heat a large non-stick skillet over medium-high heat with the neutral oil.
Add the ground chicken to the skillet, breaking it apart into small crumbles.
Sauté the chicken until it turns opaque and develops light golden-brown edges.
Add the minced garlic and grated ginger, cooking for about 1 minute until fragrant.
Stir in the chopped water chestnuts.
Whisk together the hoisin sauce, soy sauce, and sesame oil in a small bowl.
Pour the sauce mixture over the chicken, stirring to coat evenly and allowing it to reduce slightly to prevent soggy lettuce.
Remove from heat and spoon the mixture into the prepared butter lettuce leaves to serve.

Notes

Ensure the chicken is well-browned for better texture. If using iceberg lettuce, trim the edges into cups before washing to maintain structural integrity. For a spicier kick, add a dash of chili garlic sauce or red pepper flakes.
