This sophisticated and savory green bean casserole elevates the classic holiday side dish by replacing condensed soups with a rich, homemade mushroom cream base. Featuring fresh, crisp-tender green beans, earthy cremini mushrooms, and a generous topping of sharp Parmesan cheese and crispy fried onions, this recipe offers a robust flavor profile that is perfect for any occasion. It is designed to maintain a perfect texture, ensuring a satisfying crunch and creamy finish in every bite.

Ingredients

Scale

2 lbs fresh green beans, trimmed and blanched
1 lb cremini mushrooms, sliced thin
1 cup Parmesan cheese, freshly grated
1 cup heavy cream
3 cloves garlic, minced
2 cups fried onions
2 tbsp unsalted butter

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Boil a large pot of salted water and submerge the trimmed green beans for three minutes.
Drain the beans and transfer them immediately into an ice bath to stop the cooking process.
Melt the butter in a large skillet over medium heat and add the sliced mushrooms.
Sauté the mushrooms until they release their moisture and turn golden brown.
Stir in the minced garlic and cook for one minute until fragrant.
Pour in the heavy cream and half of the Parmesan cheese, simmering until the sauce thickens slightly.
Combine the blanched green beans with the mushroom sauce in a large mixing bowl.
Transfer the mixture to a baking dish and sprinkle the remaining Parmesan and the fried onions on top.
Bake for 15-20 minutes or until the top is golden and bubbling.

Notes

Ensure you use an ice bath for the green beans to preserve their vibrant color and snap. If the sauce becomes too thick, add a splash of milk or broth to adjust the consistency. Store any leftovers in an airtight container in the refrigerator for up to three days.
