2 lbs Boneless, skinless chicken breasts, sliced into cutlets
1 lb Cremini mushrooms, cleaned and thickly sliced
5 cloves Garlic, minced finely
4 tbsp Unsalted butter, cubed
2 tbsp Olive oil
2 tbsp Fresh parsley, finely chopped
Salt and pepper to taste

Instructions

Season the chicken cutlets generously with salt and pepper on both sides.
Heat the olive oil in a large cast-iron skillet over medium-high heat until the oil shimmers.
Add the chicken to the skillet in batches to avoid overcrowding and sear for 5-6 minutes per side until golden brown and cooked to an internal temperature of 165°F.
Remove the chicken from the skillet and set aside on a plate, keeping it warm.
Add the mushrooms to the same skillet and sauté until they are golden brown and tender.
Stir in the minced garlic and cook for about 1 minute until fragrant.
Reduce heat to medium-low, add the butter, and stir until melted and emulsified into a sauce.
Return the chicken to the skillet, coating it thoroughly with the garlic butter mushroom sauce.
Garnish with chopped fresh parsley and serve warm.
