Experience the classic comfort of a homemade apple pie, featuring a perfectly flaky, buttery crust and a spiced fruit filling. By combining tart Granny Smith and sweet Honeycrisp apples, this recipe offers a balanced flavor profile. The secret lies in chilling the butter to ensure those iconic layers that shatter with every bite, creating a professional-grade dessert that is truly the pinnacle of home baking.

Ingredients

Scale

6 cups apples (mix of Granny Smith and Honeycrisp), peeled, cored, and sliced
2.5 cups all-purpose flour
1 cup unsalted butter, frozen
0.75 cup granulated sugar
1 teaspoon ground cinnamon
6 tablespoons ice water
Pinch of salt

Instructions

Combine 2.5 cups flour and a pinch of salt in a large chilled mixing bowl.
Cut the frozen butter into the flour using a pastry cutter until the mixture resembles coarse crumbs.
Add ice water one tablespoon at a time until the dough holds together when squeezed.
Divide the dough into two disks, wrap tightly, and refrigerate for one hour.
Peel, core, and slice apples into thin, uniform pieces.
Toss the apples with sugar, cinnamon, and one tablespoon of flour in a separate bowl.
Roll out one dough disk on a floured surface and fit it into a nine-inch pie plate.
Pour the apple mixture into the crust, top with the second rolled-out dough disk, crimp the edges to seal, and cut vents in the top.
Bake at 375°F for 50 minutes or until the crust is golden brown and the filling is bubbling.

Notes

Keep the butter as cold as possible throughout the process to ensure the crust remains flaky. Macerating the apples helps prevent a soggy bottom by drawing out excess liquid. Serve warm with vanilla ice cream if desired.
