A halal-friendly, one-pan taco casserole with seasoned ground beef, melted cheese, and beans on a crispy tortilla chip base. Perfect for busy weeknights with its golden, gooey texture and crowd-pleasing flavors.
1 lb ground beef
1 oz pepperoni slices (see notes for substitution)
3 cups shredded cheddar cheese
8 cups tortilla chips
15 oz black beans (rinsed)
2 tbsp taco seasoning
1 cup salsa
1 cup onion (diced)
2 cups tomato (diced)
1/2 cup water (optional)
Preheat oven to 375°F (190°C). Oil a 9×13-inch baking dish.
Layer tortilla chips as the base.
Lightly pour water over chips and let sit 2-3 minutes to soften.
Add browned ground beef and drain excess fat.
Mix in taco seasoning, salsa, onion, tomatoes, and black beans.
Top with pepperoni slices (or halal alternative) and shredded cheese.
Bake for 25 minutes until cheese is golden and bubbly.
Replace pepperoni with halal-approved cooked chicken sausage or diced cooked chicken.
Use fresh shredded cheddar for optimal melting.
Plains or white beans can substitute black beans for texture variation.
Canned diced tomatoes are acceptable if fresh produce is unavailable.
