A Mexican-inspired baked casserole combining seasoned ground beef, beans, cheese, and crispy tortilla chips. Quick, family-friendly, and customizable with dietary preferences.

Ingredients

1 lb (450g) ground beef
1 15.5 oz (440g) can kidney beans, drained
1 14.5 oz (411g) can diced tomatoes
1 tbsp taco seasoning (or 2 packets)
5 cups tortilla chips
1 1/2 cups shredded cheddar cheese
1/2 cup chopped cilantro
1 avocado, sliced

Instructions

Preheat oven to 375°F (190°C)
Brown ground beef in a skillet over medium heat
Add drained kidney beans, diced tomatoes, and taco seasoning; simmer 10 minutes
Transfer mixture into a 9×13-inch baking dish
Sprinkle half the cheese over the beef mixture
Top with crushed tortilla chips
Add remaining cheese
Bake for 25-30 minutes until top is golden and bubbly
Garnish with cilantro and avocado slices before serving
