Ingredients

Scale

2 cups all-purpose flour
15 oz pure pumpkin puree
1.5 cups granulated sugar
0.5 cup vegetable oil
2 large eggs
2 tsp pumpkin pie spice
1 tsp baking soda
0.5 tsp salt

Instructions

Preheat your oven to 350 degrees Fahrenheit and grease a standard 9×5 inch loaf pan thoroughly.
Whisk the flour, pumpkin pie spice, baking soda, and salt together in a large mixing bowl.
Beat the sugar, vegetable oil, and eggs in a separate medium bowl until smooth and well-incorporated.
Stir the pumpkin puree into the wet ingredient mixture.
Combine the wet and dry ingredients, stirring just until the flour disappears into the batter.
Pour the batter into the greased loaf pan and smooth the top.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Ensure you use pure pumpkin puree and not pre-mixed pumpkin pie filling. For a variation, melted coconut oil can be used instead of vegetable oil. Store at room temperature in an airtight container for up to 3 days.
