Ingredients

Scale

2 cups all-purpose flour
1 cup unsalted butter, cold and cubed
1/2 cup granulated sugar
2 cups pecan halves, lightly toasted and chopped
2/3 cup corn syrup
2 large eggs, room temperature
1 teaspoon pure vanilla extract

Instructions

Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
Combine 2 cups of flour, 1/2 cup sugar, and 1 cup cold butter in a bowl.
Mix with a pastry cutter until the dough resembles coarse crumbs.
Press the mixture firmly into the bottom of the prepared pan to create an even, compact layer.
Bake the crust for 15 minutes or until the edges are light golden.
While the crust bakes, whisk together the eggs, corn syrup, and vanilla in a medium bowl.
Fold the toasted, chopped pecans into the egg mixture.
Pour the pecan filling evenly over the partially baked crust.
Return the pan to the oven and bake for another 20 minutes or until the filling is set.
Allow the bars to cool completely before slicing them into 16 squares.

Notes

Ensure the butter is cold for the crust to achieve the best texture. Toasting the pecans beforehand significantly enhances the nutty aroma. For a deeper flavor profile, you may substitute the granulated sugar in the crust with light brown sugar. Store bars in an airtight container at room temperature for up to 3 days.
