These Mediterranean-inspired grilled chicken skewers are the perfect protein-packed meal for busy weeknights or outdoor gatherings. By marinating cubes of chicken in a blend of Greek yogurt, lemon juice, and aromatic herbs, you ensure that every bite stays succulent and tender. This straightforward recipe utilizes basic pantry staples to achieve a professional, golden-brown charred exterior and juicy interior, making it an essential, foolproof method for any grill master.

Ingredients

Scale

1.5 lbs chicken breast, cut into 1-inch cubes
0.5 cup Greek yogurt (full-fat)
2 tbsp lemon juice, freshly squeezed
2 tbsp extra virgin olive oil
3 cloves garlic, minced
1 tsp dried oregano
Salt and pepper to taste

Instructions

Whisk the yogurt, lemon juice, olive oil, garlic, oregano, salt, and pepper in a large mixing bowl until smooth.
Add the cubed chicken to the marinade, coating each piece thoroughly.
Cover and refrigerate for at least one hour or up to four hours.
Soak wooden skewers in water for 30 minutes to prevent scorching.
Thread 4 to 5 chicken pieces onto each skewer.
Grill over medium-high heat for about 12 minutes, turning occasionally, until the chicken is cooked through and charred on the outside.

Notes

Ensure chicken cubes are cut uniformly to guarantee even cooking. If you do not have a grill, these can be prepared on an indoor grill pan over medium-high heat. Do not exceed four hours of marination to keep the chicken texture perfect.
