Ingredients

Scale

1 lb lean ground beef
6 cups low-sodium beef broth
24 oz high-quality marinara sauce
8 oz lasagna noodles, broken into bite-sized pieces
1 cup whole milk ricotta cheese
2 cups freshly shredded mozzarella cheese
3 cloves garlic, minced
2 tsp Italian seasoning

Instructions

Brown the ground beef in a skillet over medium heat until fully cooked.
Drain the excess fat from the skillet.
Mince the garlic cloves finely.
Combine the cooked beef, beef broth, marinara sauce, minced garlic, and Italian seasoning in the crockpot.
Cover and cook on high for 3 hours or low for 6 hours.
Add the broken lasagna noodles to the crockpot during the final 30 minutes of cooking.
Stir in the ricotta cheese just before serving.
Top each bowl with a generous amount of shredded mozzarella.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of broth if the noodles have absorbed too much liquid. You can substitute ground turkey for ground beef if preferred.
