Ingredients

Scale

2 lbs Boneless skinless chicken breasts
8 oz Lasagna noodles, broken into small pieces
6 cups Low-sodium chicken broth
1 cup Heavy cream
1 cup High-quality marinara sauce
1/2 cup Freshly grated parmesan cheese
2 cups Fresh baby spinach
1 Onion, diced
2 Carrots, diced
2 Celery stalks, diced
3 Garlic cloves, minced

Instructions

Sauté the onions, carrots, and celery in a large dutch oven until softened.
Add minced garlic and cook for one additional minute until fragrant.
Pour in chicken broth and marinara sauce, stirring to combine.
Add the chicken breasts to the liquid and simmer until fully cooked.
Remove the chicken, shred into bite-sized pieces, and return to the pot.
Add the broken lasagna noodles to the simmering soup and cook until al dente.
Stir in the heavy cream and grated parmesan until the broth thickens slightly.
Fold in the fresh baby spinach and cook until just wilted.
Serve immediately with an extra dusting of parmesan cheese.

Notes

Always grate your parmesan cheese by hand to ensure it melts properly into the broth. You can substitute half-and-half for heavy cream if desired.
