Ingredients

Scale

1 box (8.5 oz) cornbread mix
1 can (15 oz) cream-style corn
1 can (15 oz) whole kernel corn, drained
1 cup sour cream
1/2 cup unsalted butter, melted and cooled
2 large eggs, whisked

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Grease a 9×13 inch glass baking dish with non-stick cooking spray or butter.
In a large mixing bowl, whisk the eggs until well combined.
Add the sour cream, melted butter, cream-style corn, and drained kernel corn to the bowl and stir to incorporate.
Fold in the cornbread mix until just combined, being careful not to over-mix.
Pour the batter into the prepared baking dish and smooth the top.
Bake for 40 to 50 minutes until the center is set and the top is golden brown.
Test with a toothpick to ensure it comes out clean before removing from the oven.

Notes

Ensure the whole kernel corn is thoroughly drained to prevent excess moisture. Store leftovers in an airtight container in the refrigerator for up to three days.
