Ingredients

Scale

3 medium ripe bananas, mashed
2 cups all-purpose flour
1 cup brown sugar
1/2 cup unsalted butter, melted and slightly cooled
2 tsp ground cinnamon
2 large eggs, room temperature
1 tsp baking soda

Instructions

Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a small bowl, combine a portion of the flour, sugar, cinnamon, and melted butter to create a coarse, crumbly streusel; set aside.
In a large bowl, mash the bananas until smooth.
Whisk the eggs and melted butter into the mashed bananas until well combined.
Fold in the remaining flour and baking soda into the wet mixture until just combined.
Pour the batter into the prepared loaf pan.
Sprinkle the streusel mixture evenly over the top of the batter.
Bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
