2 lbs Ground Beef (85/15)
1.5 cups Panko Breadcrumbs
1 cup Yellow Onion, finely diced
0.5 cup Milk
2 large Eggs
3 cloves Garlic, minced
1 cup Ketchup, divided
2 tbsp Vegan Worcestershire sauce
1 tsp Salt
0.5 tsp Black Pepper

Instructions

Preheat oven to 375°F.
Soak breadcrumbs in milk for 5 minutes until softened.
Sauté onions and garlic in a pan until translucent.
In a large bowl, combine ground beef, softened breadcrumbs, eggs, cooked aromatics, 0.5 cup ketchup, Worcestershire sauce, salt, and pepper.
Mix by hand until just combined, being careful not to overwork the meat.
Shape the mixture into a loaf on a parchment-lined baking sheet.
Spread the remaining 0.5 cup of ketchup over the top of the loaf.
Bake for 60 minutes until the center is cooked through and the glaze is caramelized.

Notes

Do not overwork the meat mixture, or the loaf will become dense and tough. Ensure the internal temperature reaches 160°F for food safety. Allow the meatloaf to rest for 10 minutes before slicing to keep the juices contained.
