Experience all the savory, comforting flavors of a traditional Italian lasagna in a convenient, one-pot soup. This hearty meal features tender lasagna pasta, browned ground beef, and a robust tomato-herb broth, topped with creamy ricotta and melted mozzarella. It is a faster, stress-free alternative to layered casseroles, perfect for busy weeknights when you crave a soul-warming dish with minimal cleanup.

Ingredients

Scale

1 lb ground beef
1 medium onion, diced
4 cloves garlic, minced
28 oz crushed tomatoes
4 cups low-sodium beef broth
8 oz lasagna noodles, broken into 1-inch pieces
1 cup ricotta cheese
1 cup mozzarella cheese, shredded
2 tbsp Italian seasoning

Instructions

Heat a large heavy-bottomed pot over medium heat.
Add the ground beef and cook until browned and crumbles are small.
Stir in the diced onions and cook until translucent.
Add the minced garlic and Italian seasoning, cooking for 1 minute until fragrant.
Pour in the crushed tomatoes and beef broth, bringing the mixture to a gentle simmer.
Add the broken lasagna noodles to the pot.
Simmer for 10-12 minutes or until the noodles are al dente.
Ladle the soup into bowls.
Top each serving with a dollop of ricotta and a sprinkle of shredded mozzarella.

Notes

Ensure the heat is kept at a gentle simmer to prevent the noodles from sticking to the bottom of the pot. You may add extra beef broth if the soup becomes too thick. Store leftovers in an airtight container for up to 3 days.
