Ingredients

Scale

2 cups all-purpose flour
15oz pumpkin puree (pure, not pie filling)
1.5 cups granulated sugar
2 teaspoons cinnamon
0.5 cup vegetable oil
2 large eggs
1 teaspoon baking soda
0.5 teaspoon salt

Instructions

Preheat your oven to 350°F (175°C).
Grease a 9×5 inch loaf pan thoroughly.
In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
In a separate medium bowl, beat the eggs, sugar, oil, and pumpkin puree until smooth.
Fold the wet ingredients into the dry ingredients using a spatula until just incorporated.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Substitute half the all-purpose flour with whole wheat flour for a nuttier flavor. Ensure eggs are at room temperature for better emulsion. Store in an airtight container at room temperature for up to 3 days.
