16 oz fettuccine pasta
1.5 lbs chicken breast, cut into 1-inch cubes
2 cups heavy cream
2 cups parmesan cheese, freshly grated
4 cloves garlic, minced
3 tbsp unsalted butter
2 tbsp fresh parsley, chopped

Instructions

Preheat your oven to 375°F (190°C).
Boil the fettuccine in salted water until two minutes before the package directions suggest, then drain.
Sauté chicken cubes in a large skillet with 1 tablespoon of butter until cooked through (165°F), then remove.
In the same skillet, melt the remaining 2 tablespoons of butter and sauté minced garlic for 30 seconds.
Whisk in the heavy cream and half of the parmesan, simmering until the sauce coats the back of a spoon.
Combine the cooked pasta, chicken, and sauce in a baking dish.
Top with the remaining parmesan cheese.
Bake for 20 minutes and finish under the broiler for 2-3 minutes until golden brown.
Garnish with fresh parsley before serving.

Notes

Ensure you don’t overcook the pasta initially, as it will continue to cook in the oven. For the best flavor and texture, use real parmesan from a block rather than pre-grated cheese which contains anti-caking agents that hinder melting. Store leftovers in an airtight container for up to 3 days.
