2 lbs Ground Beef (80/20 fat ratio)
1.5 cups Sharp Cheddar cheese, hand-shredded
1 cup Panko breadcrumbs
2 large eggs
1 cup Yellow onion, finely diced
0.5 cup Ketchup (divided)
2 tbsp Yellow mustard

Instructions

Preheat your oven to 375 degrees Fahrenheit.
In a large bowl, combine ground beef, breadcrumbs, eggs, diced onion, 0.5 cups of cheddar cheese, and 0.25 cups of ketchup.
Mix the ingredients gently with your hands until just combined, being careful not to overwork the meat.
Shape the mixture into a uniform loaf on a parchment-lined baking sheet.
In a small bowl, mix the remaining 0.25 cups of ketchup with the mustard.
Brush the glaze evenly over the top and sides of the meatloaf.
Bake for 60 minutes or until the internal temperature reaches 160 degrees Fahrenheit.
Remove from the oven, sprinkle the remaining 1 cup of cheese on top during the last 5 minutes of baking, and let rest for 10 minutes before slicing.

Notes

Hand-shredding the cheddar cheese is highly recommended as pre-shredded cheese contains anti-caking agents that hinder melting. Ensure the onions are diced finely to prevent uneven texture. Allow the meatloaf to rest for at least 10 minutes to retain its juices before serving.
