1 cup pecans, chopped
1/3 cup all-purpose flour
1 tsp ground cinnamon
1 tsp vanilla extract

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Boil cubed sweet potatoes in a large pot of salted water for 15 minutes or until fork-tender.
Drain thoroughly and transfer to a large mixing bowl.
Mash the potatoes until smooth using a potato masher or electric mixer.
Stir in half of the melted butter, vanilla extract, and cinnamon until well combined.
Spread the potato mixture evenly into a greased 9×13 baking dish.
In a separate bowl, mix the brown sugar, flour, chopped pecans, and remaining melted butter.
Sprinkle the pecan topping evenly over the sweet potatoes.
Bake for 25 minutes until the topping is bubbling and fragrant.

Notes

Ensure potatoes are drained very well to prevent a watery casserole.
You can toast the pecans lightly in a dry pan before mixing into the topping for extra depth of flavor.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
