Ingredients

Organic Lemons
120g granulated sugar
1000ml filtered water
Pinch kosher salt
1/8 tsp bicarbonate of soda

Instructions

Wash lemons in saltwater bath
Cut 3 lemons into quarters; remove seeds
Zest remaining 1 lemon with microplane
Hand-squeeze juiced lemons over glass, straining into bowl
Weigh juice to reach 240ml
Dissolve sugar with 60ml warm water in bowl, stirring 30 seconds
Add remaining 300ml water to syrup
Combine juice and syrup in alternating order
Strain through fine mesh sieve twice
Add bicarbonate of soda

Notes

Use hand-squeezing for maximum juice yield
Add 2 drops sulfur dioxide (optional) for crystal clarity
Chill pitcher 30 minutes for hot days
Substitute 120g honey for sugar
For iced service: strain twice through cheese cloth
