Ingredients

Scale

2 lbs lean ground beef (85/15)
2 cans kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
28 oz fire-roasted diced tomatoes
1 medium yellow onion, diced
1 green bell pepper, diced
3 tbsp chili powder
1 cup low-sodium beef broth

Instructions

Brown the ground beef in a large skillet over medium-high heat until no longer pink.
Drain the excess fat from the beef.
Dice the yellow onion and green bell pepper into half-inch pieces.
Combine the browned beef, chopped vegetables, beans, tomatoes, and chili powder into the crockpot.
Pour the beef broth over the mixture.
Cover and cook on low for 6 hours.
Stir well before serving to ensure flavors are fully combined.

Notes

Substitute black beans for pinto beans if you prefer a different texture. This chili freezes exceptionally well for later use. Ensure your chili powder is fresh for the best flavor depth.
