Simplify your holiday cooking with this classic, creamy green bean casserole. By using fresh mushrooms and a homemade cream sauce instead of canned alternatives, this recipe delivers a deeper, more refined umami flavor. The make-ahead assembly method allows you to prepare the base in advance, keeping your kitchen organized and stress-free on the big day, while the addition of crispy onions just before baking ensures a perfect, golden, and crunchy topping that your guests will love.

Ingredients

Scale

2 lbs fresh green beans, trimmed and blanched
1 lb cremini mushrooms, finely sliced
1 cup heavy cream
0.5 cup low-sodium vegetable broth
6 oz fried onions
3 cloves garlic, minced
3 tbsp unsalted butter

Instructions

Blanch the fresh green beans in boiling salted water for 3 minutes until vibrant green.
Shock the beans in an ice water bath, drain well, and pat dry.
Sauté the mushrooms in butter over medium-high heat until golden brown.
Stir in the garlic and cook for 1 minute until fragrant.
Whisk in the heavy cream and vegetable broth, simmering until the sauce thickens.
Combine the mushroom sauce with the green beans in a bowl.
Transfer to a greased baking dish and refrigerate until ready to bake.
Preheat oven to 375 degrees Fahrenheit.
Top the casserole with fried onions and bake for 40 minutes until hot and bubbly.

Notes

The casserole base can be refrigerated for up to 24 hours before baking. Do not add the fried onions until just before baking to maintain their signature crunch.
