This indulgent Cheesy Green Bean Casserole is a modern twist on a holiday classic. Instead of canned soups, it features crisp, blanched fresh green beans smothered in a homemade, roux-based sauce crafted from vegetable broth, sharp cheddar, and mozzarella. Topped with a generous layer of crispy fried onions, this dish offers a rich, velvety texture and a perfect golden crunch, making it an ideal, crowd-pleasing centerpiece for any festive family gathering.

Ingredients

Scale

2 lbs Fresh Green Beans, trimmed and cut into 2-inch pieces
2 cups Sharp Cheddar, freshly shredded
1 cup Mozzarella Cheese, shredded
4 tbsp Unsalted Butter
1/4 cup All-Purpose Flour
2 cups Vegetable Broth
6 oz Crispy Fried Onions
1 tsp Garlic Powder

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Blanch the fresh green beans in boiling salted water for 5 minutes until bright green.
Drain the beans thoroughly and plunge them into an ice bath to stop the cooking process.
Melt the butter in a large saucepan over medium heat.
Whisk in the flour and cook for 2 minutes to eliminate the raw flour taste.
Pour the vegetable broth in slowly while whisking constantly until the sauce thickens.
Stir in the shredded cheddar and mozzarella until completely melted and smooth, then season with garlic powder.
Combine the green beans with the cheese sauce in a baking dish.
Top with the crispy fried onions.
Bake for 20-25 minutes until the sauce is bubbling and the onions are golden brown.

Notes

Ensure the green beans are thoroughly drained after the ice bath to prevent a watery casserole. Using freshly shredded cheese is highly recommended for the best melting consistency. You can prepare the base ahead of time and bake just before serving.
